im not 100% sure how this is done. Do you just run the RCAs to a four channel amp, then give each speaker its own channel and run the wires from the amp to the speakers? im not sure if this is correct and if it is, is there an easier or better way?

that is exactly it. pretty straight forward. just be sure to use good quality RCAs and good clean ground points

If you're only doing the door speakers and not the rears, a 2 channel amp will work fine. One channel per speaker.

Dunno how much you're trying to drop, but I have the Alpine PDX 4.150 in my car and I love it. 4.100 is also very nice, but the 4.150 really isn't that much more at that point.

just wondering how many watts each speaker would be getting

Some are 4 and others are 2. Best bet is to look them up on the infinity website, crutchfield, onlinecarstereo, etc. The amp should be fine though. Alpine makes nice HUs and amps, but crappy speakers.
