I'm looking to use these as subtle interior lighting in my door handes, speaker coves and other locations.

The stock pictures on oznium don't show the contacts very well. Are these on the back of the LED?

For those who haven't installed these on a circuitboard, how do you reccomend mounting them on say a flat plastic surface? (I will have access to the backside of the surface)

Yes the contacts are on the bottom surface, hence surface mount. Some of them have a small bit of metal up the sides which would allow you to still solder leads to them and glue it to a surface using the bottom of the LED.

I take it you've used these before. Do you have closeup pictures of them during/after the installation?
